摘要
鲜枣果实具有独特的采后生理特点 ,贮藏保鲜难度较大。文章综述了 80年代以来国内外在鲜枣采后生理包括果实形态、呼吸类型、内源激素、软化机理及营养成分变化等方面的研究进展 。
Fresh jujube fruits had its special post-harvest physiological characteristics, and were not easily to be fresh kept. The paper summarized the progress in post-harvest physiology of fresh jujube since 1980's including fruit shapes, respiratory types, endogenous hormones, softening mechanisms, and nutrition changes etc. The external and internal factors affecting storage period of fresh jujube was also introduced.
