摘要
双歧杆菌作为消化道的生理性益生菌,已被广泛应用于食品、医药、饲料等行业。由于双歧杆菌的生长和存活条件比较苛刻,在生产与贮藏过程中保证功能菌的活菌数量和产品质量的问题亟待解决,其中温度是对产品影响最为重要的因素之一。从双歧杆菌生长和其产品品质两方面阐述了温度对其影响的概况。
The Bifidobacterium genus, as a gastrointestinal physiological probiotic bacteria, has been widely used in food, medicine and feed industries. Due to the harsh conditions of this bacteria's growth and survival, it is urgent to solve the problem that how to ensure the viable bacteria quantity and the product qualities in the process of production and storage. Of all the factors that influence the products, temperature is one of the most important, the study aimed to review effect of temperature on growth of bifidobacteria and product qualities.
