葡萄子浸提液对亚硝化反应的抑制作用 被引量:3

摘要 采用L16(45)正交试验浸提葡萄(Vitis vinifera)子中的活性成分,并测定了葡萄子浸提液对亚硝酸钠的清除率以及对N-亚硝基化合物合成的阻断率,进而通过极差分析确定最佳浸提工艺条件。以对亚硝酸钠的清除率为考察指标,葡萄子活性成分的最佳浸提工艺条件为料液比1∶25(m/V,g∶mL),在沸腾回流条件下浸提2.0 h,该活性浸提液对亚硝酸钠的最大清除率为90.2%。以对N-亚硝基化合物合成的阻断率为考察指标,葡萄子活性成分的最佳浸提工艺条件为料液比1∶25(m/V,g∶mL),在60℃下浸提2.0 h,该活性浸提液对N-亚硝基化合物合成的最大阻断率为86.0%。 The optimum conditions for extracting active components of grape (Vitis vinifera) seeds were determined by L16(d4) orthogonal test. The scavenging effect to sodium nitrite and inhibitory effect to N-nitroso compounds formation of the extracts of grape seeds were investigated. The results showed that when considering the scavenging rate as the main index, the opti- mum extraction conditions of effective compounds from grape seeds were, the ratio of solid to solution at 1:25 (m/V,g:mL), and extracting by boiling reflux for 2 h. Under these conditions, the maximum scavenging capacity to sodium nitrite was 0.902. When considering the disconnection rate to N-nitroso compounds formation as the main index, the optimum extraction conditions were, the ratio of solid to solution at 1:25 (m/V,g:mL), and extracting at 60 ℃ for 2 h. Under these conditions, the maximum inhibitory capacity to the formation of N-nitroso compounds was 0.860.
