摘要
探讨了玉米蛋白粉是玉米深加工产业的主要副产物,玉米活性肽的制备对推动玉米蛋白粉资源的深加工和产业化进程的意义。研究了从玉米蛋白粉中酶解制备玉米活性肽的生产工艺,并对原料预处理、酶解、分离、精制等的最佳工艺条件进行探索,得到两种不同分子量的玉米活性肽产品。
Corn protein is the main by-product of corn processing industry, preparation of the corn peptide to promote the deep processing and industrialization process of zein resources has important significance. This paper studies the technology of hydrolyze corn protein into the corn peptide, determine the optimal reaction conditions of corn protein pretreatment, hydrolysis and purification., and two kinds of peptide with different molecular weight were obtained.
