射频加热技术在农产品和食品工业的应用研究进展 被引量:13

Research Advances of Application of Radio Frequency Heating in Agroproduct and Food Industry

摘要 射频加热技术是一种新型的加热手段,物料的介电特性是影响射频加热的主要参数之一。介绍了射频加热的优点、工作原理和发展历史,分析了影响物料介电特性的因素,讨论了射频技术在放电、干燥、杀虫、灭菌和肉类加工等方面的应用,指出了目前射频技术研究中存在的问题,并对其应用前景进行了展望。 Radio frequency (RF) heating is a new technology in industry. The dielectric properties of materials are one of the electric properties and play an important role in RF heating. The advantages, principle and history of RF heating were introduced in this paper. Some factors influencing the dielectric properties are discussed. The utilizations of RF technology in electro-discharge, drying, insert control, sterilization and meat processing were also introduced. The future studies of RF technology were pointed out.
