The Delicacy of Shandong Province All over the World

摘要 朱教授是地道的北京人,鲁菜是他们一家人最喜爱的菜肴。“每次光顾丰泽园,就要尽量把好吃的都点一遍,才觉得不枉去一回。”丰泽园堪称北京最出名的鲁菜馆子。 On 17th April,'Shandong Cuisine of the World', a seven episodes humanities documentary co一produced by Shandong Network Radio-TV Station, Shandong Cuisine Association, 'Good Taste' Media, started shooting in Weishan Lake Village Zaozhuang City. This documentary thoroughly presents the fascination of Shandong Cuisine and is designed for a global audience.Shandong Cuisine has always been the most popular Chinese cuisine and has covered the largest area with places such as Beijing, Tianjin, Tangshan and the three Provinces in Northeast China. Since the Song dynasty, Shandong Cuisine has become the symbol food in the northern part of China. For the Ming and Qing dynasty, Shandong Cuisine became the main royal cuisine, and was influential around Beijing, Tianjin and even overall Northeast China. In those years, as a result of many cooks going to Beijing to open restaurants, the influence of Shandong Cuisine spread more widely as well. For example, the cooking style of the famous Quanjude Peking Roast Duck was originally derived from Shandong.During the process of the formation and development of all Chinese cuisines, the period of Confucian Cuisine has the longest history. Confucian dietary culture and Confucian Cuisine also spread all over the world as a Chinese cultural representative.Chinese have a special emotion towards food, which comes not only through daily life and cooking, but is also based on Chinese character. Moreover, food is a medium to express the homesick feelings of overseas Chinese people. 'Why could Chinese dietary culture still be attractive in the society of Chinese people abroad?' One of the reasons is that Chinese dietary culture pays attention to eastern etiquette; another is that Chinese food had become a cultural symbol for Chinese both at home and abroad. Shandong Cuisine has its own unique advantage to become popular around the world:' said the member of Shandong Cuisine Association, and in recent years, the government of Shandong province has promoted standardization of Shandong Cuisine and enhanced professional training aiming to make Shandong Cuisine go global as a Chinese cultural symbol.
