nisin是目前唯一被允许使用于食品防腐的抗菌素。本文介绍了nisin和它的抗菌机理 ;
Nisin was only allowed in food preservation as antibiotic at present . Not only nisin and its antibiotic mechanism were introduced, also the principles and situation of its practical applications in food industry were expounded. Through those above mentioned showed the developing tendency of nisin.
