摘要
以大鲵肉为原料,研究大鲵肉活性肽的响应面提取工艺及其运动饮料的研制。结果表明:大鲵肉活性肽提取最佳工艺条件为超声提取时间为19.0min,超声功率为249.9W,液料比为22.5:1(mL/g),酶用量为3.3%。而且,进行大鲵肉活性肽运动饮料的研制,得到最佳工艺为:料水比为1∶7(mL/mL),柠檬酸量为0.4%,蔗糖量为10.0%,维生素C量为0.6%。
Mainly discuss the preparation technology and development of sports beverage from active peptide of Andrias davidianus flesh. The optimum extraction conditions of active peptide of Andrias davidianus flesh were determined, such as ultrasonic time for 19.0 min, ultrasonic frequency for 249.9 W, the solution to material ratio for 22.5:1(mL /g), enzyme/substrate ratio fo for 3.3%. The optimum conditions to develop a kind of sports beverage product from active peptide of Andrias davidianus flesh was be obtained, such as anti-fatigue peptide to water for 1:7(mL /mL), citric acid for 0.4%, the mounts of sucrose for 10.0%, and VC concentration for 0.6%.
