延黄牛和西门塔尔牛肉品质对比研究 被引量:17

Comparative Study on Meat Quality Traits of Yan Yellow Cattle and Chinese Simmental

摘要 选择12月龄的延黄牛与中国西门塔尔牛(平原类群)各10头,持续育肥12个月,对牛肉品质进行了对比研究。结果表明:延黄牛系水力、熟肉率、剪切力、粗脂肪含量等指标均极显著优于中国西门塔尔牛(P<0.01)。说明延黄牛肌肉品质优良,适宜生产高档牛肉。 Ten Yan yellow cattle and 10 Chinese Simmental( 12 month-old) were intensively fattened for 12 months,and meat quality traits of them were compared. The results showed that water holding capacity,cooking percentage,shear force and intramuscular fat content of Yan yellow cattle were significantly better than the Chinese Simmental( P 0. 01). So we concluded that Yan-yellow cattle had excellent meat quality and was suitable for high-grade beef production.
