摘要
电子舌和电子鼻技术是一种模拟仿真技术,介绍了两者的基本原理和模式识别方法。探讨了电子舌和电子鼻技术在白酒、黄酒和葡萄酒等酒中的研究及应用,包括酒类风味分析、酒类原产地区分辨别、酒类品种区分、酒类真伪辨别和酒龄辨别等。
Electronic tongue/electronic nose technology is a simulation technology. In this paper, the basic principles and the pattern recognition methods of electronic tongue/electronic nose technology were introduced. The research on/application of electronic tongue/electronic nose technology in Baijiu(liquor), yellow rice wine and grape wine were discussed in the fields of flavor analysis, discrimination of the producing places of the products, differentiation of varieties, authenticity identification of the products, and product age discrimination etc.
