玉米蛋白粉中醇溶蛋白的提取工艺研究 被引量:6

摘要 利用超声波技术提取玉米蛋白粉中的玉米醇溶蛋白。采用双缩脲法测定蛋白质的含量,通过单因素和正交实验得到的最佳工艺条件为:料液比为1∶15,乙醇体积分数为65%,超声时间为50 min,超声温度为60℃。玉米醇溶蛋白提取率可达61.78%。 The process of extracting zein from com gluten meal was studied with ultrasonic technology. The method of protein quantificational determination was biuret method. The factors effective for extraction were investigated through single factorial test and orthogonal experiments. The results showed that the optimum parameters were solid-liquid ratio 1 : 15, 70 % ethanol, extracting time 50 min, temperature 60 ℃. Under this condition the extraction rate reached 61.78 %.
