摘要
食用菌具有丰富的营养价值以及广泛的药理价值,其产品受到国内外市场越来越多的关注。食用菌脆片类休闲食品加工技术是目前食用菌休闲食品研究领域研究的热点和重要领域。本文就食用菌脆片食品加工过程中易出现的问题和加工工序对食用菌产品产生的品质影响进行了概述和分析,并对食用菌脆片类食品开发前景进行了展望。
With rich nutritional value and a wide range of pharmacological value,the edible fungi products were gained more and more attention at home and abroad market. The processing technology of edible fungi chip food was also an important field for current researching. The problems and the effects of manufacturing processing on quality of edible fungi chip food were summarized and analyzed,and we put forward the research prospect of edible fungi chip food.
