摘要
谷子作为小杂粮,在我国种植面积较大。小米糠(麸皮)是谷子加工后的副产物,营养价值较高,是一种附加值高的可再生利用资源。我国小米糠资源丰富,具有广阔的开发前景。综述了小米糠的营养价值和深加工研究进展,并提出了小米糠的进一步研究与开发建议。
Millet bran as small grains,has wide planting area in China.As the main processing products,millet bran is rich in nutrition,and is a kind of renewable resource with high added value.There are abundant millet bran resources in China,so it has high development value.The nutritional function and progress of research related to millet bran were discussed in detail and the research and exploitation in the future were suggesed.
