集贸市场市售肉制品中亚硝酸盐含量检测及调查研究 被引量:2

摘要 目的了解上饶市集贸市场市售肉制品亚硝酸盐含量,以及时发现亚硝酸盐含量超标肉制品,切实避免亚硝酸盐中毒事件发生。方法按照PPS抽样调查方法,随机检查全市12个县(区)集贸市场市售肉制品,统计其亚硝酸盐含量。结果共选取上饶市市售肉制品544件,其中检测合格率96.88%(527/544),检测亚硝酸盐最大值为193 mg/kg。结论亚硝酸盐在当前市售肉制品中的使用率较高,需加强检测管理,切实维护居民生命财产安全。 Objective To investigate the content of nitrite in marketed meat products in bazaars of Shangrao city, and to find the meat products containing excessive nitrite to preventing nitrite poisoning events. Methods According to PPS sampling survey method, the content of nitrite in the commercial meat products from the bazaars of 12 counties (districts) in Shangrao city were randomly checked and statistically analyzed. Results Total 544 samples were selected, and the qualified rate was 96.88 % (527/544) and the maximum content of nitrite was 193 mg/kg. Conclusion Nitrite is used frequently in current commercial meat products, so its management should be strengthened to safeguard life and property security of residents.
