Determination on Nutritional Components in Seeds of Moringa oleifera

摘要 以辣木籽为研究对象,对其主要营养成分含量进行测定,结果表明:辣木籽粗脂肪含量为40.12%、蛋白质含量为37.8%、总糖含量为9.75%;辣木籽含有17种氨基酸,氨基酸总量为32.53%;辣木籽中大量元素P、K、Mg、Ca和Na含量分别为1 262、1 026、495、106、143mg/kg,且K、P的含量远高于Ca、Mg、Na;辣木籽中微量元素Zn、Fe、Mn、Cr和Se含量分别为69.5、30.8、29.6、8.25、0.395mg/kg,且Fe、Mn、Zn的含量远高于Se;辣木籽As、Pb、Hg和Cd等重金属含量非常低。 The major nutritional components in seeds of Moringa oleifera were determined comparatively. Results showed that the content of crude fat were 40. 12%,protein were 37. 8%,total sugar were 9. 75%. Totally 17 kinds of amino acids were identified in seeds of Moringa oleifera,and the total content of amino acids were 32. 53%. beneficial constant elements and trace elements. The content of P in seeds of Moringa oleifera were 1 262 mg / kg,K were 1 026 mg / kg,Mg were 495 mg / kg,Ca were 106 mg / kg,Na were 143 mg / kg,and the content of K and P was much higher than that of Ca,Mg and Na. The content of Zn were 69. 5mg / kg,Fe were 30. 8mg / kg,Mn were29. 6mg / kg,Cr were 8. 25 mg / kg,Se were 0. 395 mg / kg and the content of Fe,Mn,Zn was much higher than that of Se. The content of heavy metal elements including As,Pb,Hg and Cd was extremely low.
