摘要
目的对梭子蟹不同部位镉含量进行检测以了解其污染状况。方法将廊坊地区市售的梭子蟹可食部分分成蟹黄、蟹膏、胸肌和腿肌4个部分。经微波消解后采用石墨炉原子吸收光谱法进行镉含量测定,并对检测结果进行分析评价。结果廊坊地区市售的梭子蟹镉平均含量达到1.06 mg/kg,整蟹镉含量超标率达到73.1%,不同部位镉含量表现为:蟹黄>蟹膏>胸肌>腿肌;其中腿肌未发现镉超标现象,蟹黄镉超标率达到93.3%,最高超标近33倍;同一蟹体中的镉含量蟹黄与腿肌最高相差233倍。结论廊坊地区市售的梭子蟹蟹黄、蟹膏中镉含量超标严重,存在一定安全风险,应谨慎食用。
Objective To determinate cadmium content at different parts ofPortunus trituberculatus in order to understand its pollution condition. Methods Edible parts of Portunus trituberculatus sold in markets of Langfang were divided into 4 parts, including liver-pancreas, gonad, chest muscle and leg muscle. The cadmium content was detected by graphite furnace atomic absorption spectrometry after microwave digestion, and then analyzed and evaluated. Results Cadmium content in Portunus trituberculatus sold in markets of Langfang was 1.06 mg/kg on average, and the exceeding standard rate was up to 73.1%. Performance for cadmium from different parts of Portunus trituberculatus was: liver-pancreas〉 gonad〉chest muscle〉leg muscle, and cadmium content was not detected in leg muscle. Exceeding standard rate of cadmium in liver-pancreas reached 93.3%, the highest exceeding standard levels was nearly 33 times, and content of cadmium in liver-pancreas was 233 times than leg muscle in the same crab. Conclusion Cadmium content of liver-pancreas and gonad cadmium from Portunus trituberculatus sold in markets of Langfang exceeded seriously, which showed certain security risk. So Portunus trituberculatus in Langfang should be eat carefully.
