摘要
本文对茯砖茶微生物及其品质进行了全面的综述。文章重点分析了与茯砖茶制怍工艺中“渥堆”和“发花”相关的微生物,总结了经“渥堆”和“发花”后茯砖茶品质的变化情况,同时指出茯砖茶进一步发展面临的主要问题。
The microbial and quality of Fuzhuan brick tea were reviewed comprehensively. The related microbes of the Pile- fermentation and Fahua -fermentation process of Fuzhuan brick tea were analgzed the quality of Fuzhuan brick tea after the Pile- fermaentation and Fahua -fermentation process were summarized. At the same time, pointed out the main problems of the Fuzhuan brick tea for the further development.
