客家黄酒的抗氧化作用研究 被引量:16

摘要 以绍兴黄酒作为对照,对不同品牌的客家黄酒中的化学成分进行测定,并对其清除DPPH自由基、超氧自由基、ABTS自由基、羟自由基的能力进行研究。结果表明,不同品牌黄酒的酒精度、可溶性固形物、总黄酮、多酚、总酚酸含量依次分别为:珍珠红娘酒16.31%vol、103.42 g/L、0.89 mg/L、11.98 mg/L、0.19 mg/L;梅州娘酒15.63%vol、101.72 g/L、1.86 mg/L、10.3 mg/L、0.42 mg/L;月子酒13.42%vol、91.90 g/L、1.61 mg/L、12.13 mg/L、0.56 mg/L。三种客家黄酒均对DPPH自由基、超氧自由基、羟自由基、ABTS自由基有一定的清除能力:珍珠红娘酒对四种自由基的IC50值依次为68.05μL/mL、388.11μL/mL、405.71μL/mL、438.54μL/mL,梅州娘酒的IC_(50)值为55.94μL/mL、378.09μL/mL、387.90μL/mL、440.80μL/mL,月子酒的IC50值为98.63μL/mL、871.65μL/mL、345.42μL/mL、935.20μL/mL。综合比较可知,珍珠红娘酒、梅州娘酒的抗氧化性高于月子酒和绍兴黄酒。 Using Shaoxing rice wine as control, the scavenging activity of the Hakka rice wine on DPPH·, O2·-, ABTS·, ·OH was determined. The results showed that different brands of Hakka rice wine had flavones, polyphenol, phenolic acids. The alcohol content, soluble solids, total flavones content, polyphenol content, total phenolic acids content of Hakka rice wine were as follows respectively: Zhenzhuhongniang 16.31%vol, 103.42 g/L, 0.89 mg/L, 11.98 mg/L, 0.19 mg/L; Meizhouniang 15.63%vol, 101.72 g/L, 1.86 mg/L, 10.3 mg/L, 0.42 mg/L; Yuezi 13.42%vol, 91.90 g/L, 1.61 mg/L, 12.13 mg/L, 0.56 mg/L. The three Hakka rice wine all showed scavenging activity on DPPH·, O2·-, ABTS·, and ·OH, and the IC50 values towards the four flee radicals were as follows respectively: Zhenzhuhongniang 68.05 μl/ml, 388.11 μl/ml, 405.71 μl/ml, 438.54 μl/ml; Meizhouniang 55.94 μl/ml, 378.09 μl/ml, 387.90 μl/ml, 440.80 μl/ml; Yuezijiu 98.63 μl/ml, 871.65 μl/ml, 345.42 μl/ml, 935.20 μl/ml. In comprehensive consid- eration, the antioxidant activity of Zhenzhuhongniang and Meizhouniang rice wine were higher than Yuezi and Shaoxing rice wine.
