New Approach to Detect Quality of Pork Using Raman Scattering

摘要 拉曼散射信号给出物质中分子振动的频率等信息,分析拉曼散射光谱,可快捷地认证物质。分析猪肉的拉曼散射光谱,通过标记波峰的变化反映出猪肉品质变化,以期建立猪肉拉曼散射光谱与猪肉品质对应模型,可以为肉品快速检测创造有利条件。试验得出结论:猪肉表层蛋白质含量以及肉色都可与拉曼散射光谱对应,猪肉的拉曼散射光谱可以反映出猪肉品质变化。 The Raman scattering signal has given a material information about the frequency of the molecular vibration, and the material of the subjects can be quickly certified by the analysis of Raman scattering spectrum. If the Raman scattering spectra of pork has been analyzed, the pork quality has been identified by the way of the variable trends of the characteristic peaks. A Raman scattering spectra of the pork and the corresponding model of the pork quality has been theorized accompany by all the work, creating a favorable conditions for the rapid test of meat. The experimental conclusion was that the content of the pork surface protein and the fleshcolor correspond with the Raman scattering spectroscopy, Raman Scattering Spectroscopy of pork could reflect the meat quality.
