摘要 可食用膜是以天然可食性物质(如蛋白质、多糖、脂类)为原料,通过不同分子间的相互作用形成具有多孔网络结构的薄膜。可食用膜具有可食用、可降解、无污染等特点,具有极大的市场应用价值和良好的开发前景。它克服了其他包装膜的缺点,其开发和应用对缓解环境污染压力、节约资源具有重要意义。通过对可食用膜成膜机理、分类和应用进行简要综述,指出该研究领域存在的问题,并对未来研究重点和应用进行展望,为可食用膜的进一步开发和利用提供参考。 Edible film made from natural edible material(such as proteins, polysaccharides, lipids) is a film with porous network structure formed by the interaction between different molecules. Edible film is edible and biodegradable without pollution, which can bring about a great application value and good prospect of market. It overcomes the drawback of other packaging film. Its development and application to alleviate the pollution pressure of the environment and save resources are of great significance. The film- forming mechanism, classification and application of edible membrane proposed by previous studies are reviewed with a statement of issues need to be addressed and the future research and application direction in the field,which can offer a reference for the further development and utilization of edible film.
