摘要
以水解明胶为壁材、番茄红素晶体为芯材,以喷雾干燥技术制备10%番茄红素微胶囊。以番茄红素微胶囊效率为考察指标,通过单因素和正交试验对番茄红素微胶囊的配方和工艺进行了研究,结果表明最佳配方为番茄红素晶体15%、葵花籽油15%、水解明胶44%、蔗糖22%、吐温-80 2%、混合生育酚2%。喷雾干燥工艺参数为:进风温度180℃、气流压力0.17 MPa、进料温度55℃、进料流量400 mL/h。所得产品在40℃、75%RH条件下放置4 d的含量保留率为97.0%,而番茄红素晶体仅为1.1%,表明稳定性得到显著提高。
The preparation of 10% lycopene microcapsule by spray-drying using hydrolyzed gelatin as the wall material and lycopene crystal as the core material was studied. The formulation and process of lycopene microcapsules were studied by single factor and orthogonal experiment. The optimal formulas were lycopene crystal(15%), sunflowerseed oil(15%), hydrolyzed gelatin(44%), sucrose(22%), Tween-80(2%) and mixed tocopherol(2%). 180 ℃ for inlet temperature, 0.17 MPa for inlet air pressure, 55 ℃ for feeding temperature and 400 mL/h for feeding flux were optimal for conditions of spray-drying. The retention rate of lycopene microcapsules was 97.0% at 40 ℃ and 75% RH for 4 d, while the retention rate of lycopene crystal was only 1.1%, suggesting that the stability was enhanced markedly.
