摘要
随着生活水平的提高,乳及乳制品在国人膳食结构中占据了重要地位,同时其质量安全问题也日益受到重视。黄曲霉毒素是一组由曲霉属真菌产生的次级代谢产物,因其毒性强、分布广、危害大,一直都是生鲜乳质量安全重点关注的风险因子。饲料为生鲜乳中黄曲霉毒素残留的主要来源,因而控制生鲜乳中黄曲霉毒素含量的关键在于从源头上对饲料原料进行严格防控。本文介绍了饲料黄曲霉毒素的生成代谢、污染现状,并总结了其脱毒方法的最新进展,旨在为实际生产中对黄曲霉毒素的研究与防控提供参考。
Recently, with the advance of the standard of living, milk and its products occupy an important position in the dietary structure of the people. Against this backdrop, their quality and safety issues has attracted increasing attention. Aflatoxin is a group of secondary metabolites produced by Aspergillus fungi. and has always been a priority risk agent for the quality and safety of fresh milk. Feedstuff is the major source of a?atoxin residues in fresh milk. Therefore, the key to controlling the a?atoxin content in fresh milk is the strict control of feed ingredients at the source. In this article, the metabolism and contamination of a?atoxin in feedstuff were introduced, and the latest progress of its detoxifcation method was reviewed, which aimed to provide reference for the research and control of a?atoxin in actual production.
