摘要 阐述了2种淀粉脱支酶的作用机理,简要综述了2种淀粉脱支酶的类型、研究历史及测定方法、对淀粉粒结构与品质的影响及应用前景。 The paper elaborated the mechanism of two types of starch debranching enzyme,and summed up their types,research history,measure method, the influence on starch instruction and quality and application perspective.
