摘要
在广泛查阅近十年资料的基础上,本文就超声波在食品检测、加速化学反应、结晶、萃取、乳化和均质、干燥以及解冻等食品工业领域中的应用进行了综述。
A review about the basic principles of the ultasonic technology and its application to food industry is stated.The ultrasonic technology is used in the fields of food detection, accelerating action,food crystallization, solvent extraction,food emulsion,thawing of frozen foods and so on.
