摘要
探讨了水溶性壳聚糖的抗菌、抗氧化、成膜及凝胶增强等特性在水产品加工与贮藏过程中的应用,为水溶性壳聚糖的综合利用与开发提供参考。对国内外文献、资料进行归纳、分析并加以综述。结果表明,水溶性壳聚糖的抗菌性与壳聚糖的平均分子量和质量浓度有关,水溶性壳聚糖具有较好的生物膜活性,而水溶性壳聚糖能与鱼肉中的肌原纤维蛋白结合形成蛋白—壳聚糖结合体,在内源性谷氨酰胺酶的作用下,该结合能促进鱼糜凝胶的形成能力。水溶性壳聚糖在水产品加工与贮藏过程中的应用前景较广。
To introduce the research advances on preparative technique and molecular structure of water-soluble chitosan(WSC),and its features,such as antibacterial and antioxidant properties,edible film-and coating-forming ability,enhanced gelling properties.The related international and Chinese literatures for water-soluble chitosan preparation and their bioactivity were analyzed and summarized.The antibacterial and antioxidant properties of WSC related to its molecular weight and concentration,WSC has good film-and coating-forming ability,protein-chitosan conjugates were formed between the WSC and the glutaminyl residue of the myofibrillar proteins.This conjugates enhance gelling properties.WSC have a huge potential applications in aquatic products processing and storage process.
