横县鱼生制作技艺的传承与发展

摘要 横县鱼生是著名的地方传统名菜,具有刀工精细、造型逼真、配料独特、口味鲜美、历史悠久等特点。横县鱼生制作技艺已被列入广西壮族自治区级非物质文化遗产保护名录,对其保护有较好的政策和制度基础。虽然横县鱼生制作技艺得到了较好的传承与发展,但随着生态环境的逐渐恶化和消费者观念的不断变化,食用鱼生的负面消息相继出现,给横县鱼生制作技艺的传承与发展提出了严峻挑战。 Heng County Yusheng is a famous local traditional dish,which has the characteristics of fine knife work,realistic style,unique ingredients,delicious taste and long history.Heng County fish production technology has become the protection object of intangible cultural heritage in Guangxi Zhuang Autonomous Region,which has a good policy and institutional basis for the protection of this traditional technology.Due to the deterioration of the ecological environment,the change of consumer s consumption concept and some negative news,the inheritance and development of this intangible cultural heritage has been challenged severely.
