摘要
精酿黑啤酒是近几年进入消费者视野中,其酿造工艺对成品啤酒的风味和口感具有重要的影响。本文从原料选择、酿造工艺和操作要点等方面简要论述了精酿黑啤酒的酿造工艺,并对精酿黑啤酒的研究趋势进行简要介绍。
In recent years,craft black beer has come into consumers’eyes,its brewing technology had great influences on beer flavor and tastes.In order to research the brewing technology of craft black beer,the selection of materials,the brewing process,the quality indexes and the operation points were discussed.What’s more,the research direction of craft black beer had also been illuminated.
