摘要
糖尿病作为一种慢性代谢性疾病,在我国的发病率逐年增高,饮食干预是糖尿病预防治疗中的重要手段。荞麦作为一种药食两用的食材,对糖尿病的预防治疗作用被逐渐认识。主要介绍了荞麦的营养价值、荞麦对糖尿病的干预机制、荞麦在糖尿病人食品中的应用等几个方面研究成果。荞麦中的芦丁、槲皮素、荞麦碱等是近年来的大多数研究的关注点;其主要作用机制包括胰岛素信号传递途径的调节、相关酶活性的调节、机体氧化应激性的减弱等等;关于荞麦食品在预防治疗糖尿病方面的膳食实验研究处于初级阶段。
The incidence of diabetes,a chronic metabolic disease,is increasing year by year in China.Dietary intervention is an important means of diabetes prevention and treatment.Buckwheat is used as medicine and food.Its role in the prevention and treatment of diabetes is gradually recognized.In this paper,the nutritional value,the intervention mechanism on diabetes and the application in diabetic food of buckwheat were summarized.Quercetin,rutin and D-fagomine in buckwheat are most of the research focus on in recent years.The main diabetes intervention mechanisms include the regulation of insulin signaling way,related enzyme activity regulation,weakened the oxidative stress and so on.Studies on the dietary application of buckwheat in the prevention and treatment of diabetes mellitus are in the preliminary stage.
