摘要
目的了解日照市常见市售海产品中总砷与无机砷含量,为食品安全风险评估提供基础资料与科学依据。方法2019年10~12月在日照市市直、县区各农贸市场、超市、食堂等进行随机采样,用电感耦合等离子体质谱仪(ICP-MS)测定检品中总砷含量,用液相色谱-原子荧光光谱仪测定检品中无机砷含量,并对检测结果进行分析。结果检测海产品110份样品,鱼类30份,非鱼类80份。总砷在鱼类及非鱼类水产品中检出率均为90.00%,最大值分别为3.367mg/kg和10.502mg/kg;无机砷在鱼类及非鱼类水产品中分别有1份和5份检出,均未超标。砷在3种海水鱼类与4种非鱼类海产品中含量之间差异均无统计学意义(P>0.05)。结论日照市市售海产品中总砷含量普遍存在但含量较低,无机砷仅在部分检品中有检出,且检测结果均低于国家限量要求。
Objective To understand the contents of total arsenic and inorganic arsenic in common commercial seafood in Rizhao city,so as to provide basic data and scientific basis for food safety risk assessment.Methods Random sampling was carried out in farmers'markets,supermarkets and canteens in districts and counties of Rizhao city.The total arsenic content in samples was determined by inductively coupled plasma mass spectrometer(ICP-MS),and the inorganic arsenic content in samples was determined by liquid chromatography-atomic fluorescence spectrometer,and the detection results were analyzed.Results A total of 110seafood samples were detected including 30samples of fish and 80samples of non-fish.The detection rate of total arsenic in fish and non-fish seafood was 90.00%,and the maximum value was 3.367 mg/kg and 10.502mg/kg respectively;inorganic arsenic was detected in 1fish and 5non-fish seafood respectively,and the over-standard rate was 0.There was no significant difference in total arsenic content between 3marine fish and 4non-fish seafood(P>0.05).Conclusion The total arsenic content in the seafood is wide spread but the content is low,inorganic arsenic is detected only in some inspections,and the test results are lower than the national limit requirements in Rizhao city.
