摘要
肉兔是食草动物,以食草为主。据《本草纲目》记载:“兔肉味甘性寒,有补中益气,清补脾肺,养胃利肠之功效”,具有极高的食疗价值,现代科学研究将其概括为“三高三低”,即高蛋白质、高赖氨酸、高消化率,低脂肪、低胆固醇和低热量。自古就有“飞禽莫如鸪,走兽莫如兔”的说法,兔肉已成为许多发达国家的时尚食品,素有“保健肉、美容肉、益智肉”的美称。研究并融合传统工艺和现代高新技术,真空滚揉、腌制、烘烤、修整、切分、包装、杀菌等生产工艺;精选优质生态兔肉原料,经科学配料加工而成的手撕烤兔制品,其产品不仅色泽亮丽,香味浓郁,口感俱佳,久食不腻,老少皆宜,而且易于保存,携带食用方便,为兔肉产品的工业加工开辟了一条新的途径。
