摘要
铁离子是构成人体组织和维持正常生理功能所必需的微量营养元素,当体内缺乏铁离子时易导致许多营养缺乏症。Fe^2+/Fe^3+结合活性肽是一种具有结合Fe^2+/Fe^3+能力,并可与之形成可溶性结合物的肽类物质,其在生物体内可促进铁离子的吸收。本文从Fe^2+/Fe^3+结合活性肽的食物来源、制备、分离纯化、结构特征以及肽-Fe2+/3+结合物的形成、结合位点、促Fe^2+/Fe^3+吸收机制等方面进行综述,以期为Fe2+/Fe3+结合活性肽的研究及产品开发提供参考。
Iron ion is a necessary micronutrient for constituting human tissues and maintaining normal physiological functions.Iron deficiency in the body is prone to cause many nutritional deficiencies.Fe^2+/Fe^3+chelating peptide is a kind of peptide that has the ability to chelate Fe^2+/Fe^3+forming a soluble conjugate,which can promote the absorption of iron in the body.This paper summarizes the food sources,preparation,separation and purification,and structural characteristics of Fe^2+/Fe^3+chelating peptides,as well as the formation and chelating sites of peptide-Fe^2+/3+complexes and the mechanism for promoting Fe^2+/Fe^3+absorption,in order to provide a theoretical basis for the research and product development of Fe2+/Fe3+chelating peptide.
