摘要
目的:通过测定太仓市坚果炒货类的过氧化值和酸价,保证产品质量安全。方法:依据GB 5009.227—2016和GB 5009.229—2016对样品进行过氧化值和酸价测定,根据GB 19300—2014、GB 16565—2003和GB/T 22165—2008进行判定。结果:2017—2019年共检测坚果炒货类食品327份,不合格44份,不合格率13.46%。不合格项目有两项,分别为过氧化值(不合格率11.93%)和酸价(不合格率1.83%)。结论:太仓市坚果炒货类食品质量存在较大安全隐患,应继续加强监测力度,确保食品安全。
Objective: To determine the peroxide value and acid price of nuts in Taicang, and ensure the product quality and safety. Methods: Through random samples of roasted seeds and nuts in circulation link of Taicang city, the peroxide value and acid value of the samples were determined according to GB 5009.227-2016 and GB 5009.229-2016, and judged according to GB 19300-2014, GB 16565-2003 and GB/T 22165-2008. Result: A total of 327 samples of roasted seeds and nuts were detected from 2017 to 2019 with 44 unqualified samples. The detection rate of unqualified samples was 13.46%. Unqualified items consisted of peroxide value(unqualified rate: 11.93%) and acid value(unqualified rate: 1.83%). Conclusion: The quality of roasted seeds and nuts in Taicang city has great potential safety hazard, so we should continue to strengthen the monitoring force to ensure food safety.
