摘要 【目的】为了促进活鱼运输产业关注的提高鱼的存活率、降低运输成本、保障鱼的品质与食用安全性等主要问题的解决。【方法】综述鱼类有水保活和无水保活策略以及保活运输过程中暂养、低温休眠、人工麻醉、运输装备、无水包装、环境控制、运输监控、唤醒等关键技术,分析现有鱼类保活运输技术存在的问题,展望鱼类保活运输技术的未来发展趋势。【结果与结论】在保活运输过程中宜采用多种关键技术联合使用,加强鱼类基础应激研究、开发新型的高效安全绿色麻醉剂、研发活鱼运输装备与监测系统与制定活鱼运输行业标准。 【Objective】To improve fish survival rate,reduce costs,and ensure fish quality and food safety in fish transportation.【Methods】Review the strategies of keeping fish alive without water and temporary rearing technique,low-temperature dormancy,artificial anesthesia,transportation equipment,anhydrous packaging,environmental control,transportation monitoring,and wake-up during transportation.The problems in the current live-fish transportation technology are analyzed,and the future development trend of the live-fish transportation technology is prospected.【Results and Conclusion】It is recommended to use a variety of key technologies in live-fish transportation,strengthen basic research in fish stress,develop efficient and safty use of green anesthetics,develop live-fish transportation equipment and monitoring systems,and develop a live-fish transportation standard for the industry.
