摘要 保健酒是我国传统的酒类饮品之一,通常是以蒸馏酒、发酵酒或食用酒精为基酒,加入符合国家有关规定的原料、辅料或食品添加剂,经注册或备案,并声称具有保健功能的饮料酒,因其具有调节机体的功能,受到人们的广泛关注。该文介绍了我国保健酒的发展历史、保健功效、生产工艺、除浊处理及质量评价方面的内容,并根据现有的研究,对保健酒行业的未来发展进行了展望,同时对保健酒行业的发展提供参考。 Health wine is one of the traditional Chinese alcoholic drinks,it is usually based on distilled spirit,fermented alcoholic drink or edible alcohol as base liquor,adding raw materials,auxiliary materials or food additives in accordance with the relevant provisions of the state or the registration for the record,and claims that has the health functions of alcoholic drink.Due to its function of regulating the body,it has attracted widespread attention.In the paper,the development history,health function,production technology,turbidity removal and quality evaluation of health wine in China was introduced,and the future development of health wine industry was prospected according to the existing research,which provided a reference for the development of health wine industry.
