刺梨气泡水配方优化及其抗氧化和抗疲劳活性研究 被引量:3

Formula Optimization of Sparkling Water of Rosa roxburghii Tratt and Its Antioxidant and Antifatigue Functions

摘要 通过正交试验对刺梨气泡水的产品配方进行优化,测定产品对羟自由基和超氧阴离子自由基的清除率,并通过小鼠负重游泳试验观察产品的抗疲劳活性。结果表明,优化后的产品配方为:果葡糖浆8%,刺梨浓缩汁7%,二氧化碳0.4%,牛磺酸0.05%,瓜拉纳提取物0.05%,柠檬酸0.006%,植酸钠0.005%,三氯蔗糖0.000 9%。根据该配方工艺制得的产品淡黄透亮,色泽均匀,酸甜适中,并有刺梨的香味和气泡饮料的清凉感,VC含量达290 mg/100 mL,对羟自由基和超氧阴离子自由基的清除率分别达92.62%和82.84%,表现出较强的抗氧化活性。产品的小鼠负重游泳时间达26.25 s,表现出较强的抗疲劳活性。刺梨汁和牛磺酸、瓜拉纳提取物配合使用,可极显著提高产品的抗疲劳作用。 The formula of Rosa roxburghii Tratt sparkling water was optimized by orthogonal tests, whereas the scavenging rates of hydroxyl free radical and superoxide anion free radical were determined. The anti-fatigue activity was observed by weight-bearing swimming test in mice. The results showed the optimized formula as below: fructose syrup 8%, R. roxburghii juice 7%, carbon dioxide 0.4%, taurine 0.05%, guarana extract 0.05%,citric acid 0.006%, sodiumphytate 0.005%, sucralose 0.000 9%. The product prepared according to the optimized formula was light yellow and transparent, which had uniform color, moderate taste of acidity and sweetness with the special aroma of R. roxburghii as well as the cool feeling of sparkling beverage. The content of vitamin C was290 mg/100 mL, and the scavenging rates of hydroxyl radical and superoxide anion radical were 92.62% and82.84%, respectively. The weight-bearing swimming time of the product reached 26.25 s, showing strong anti-fatigue activity. The combination of R. roxburghii juice, taurine and guarana extract can significantly improve the anti-fatigue effect of the product.
