摘要
国内外对因食品微生物导致的大规模食物中毒事件的报道层出不穷。食品微生物污染所带来的后果比其他类型的食品污染更为严重。当前对食品微生物的防控贯穿食品生产加工的全过程。质控品作为给被测参数赋值的标尺,在数据准确度方面起到了关键作用。文章通过阐述当前各种质控品制备程序以及关键步骤并结合在食品微生物检测中的实际应用,以供相关人员参考。
The reports of large-scale food poisoning incidents caused by food microorganisms emerge in endlessly at home and abroad.The consequences of food microbiological contamination are more serious than other types of food contamination.At present,the prevention and control of food microorganisms runs through the whole process of food production and processing.As a scale to assign values to measured parameters,quality control products play a key role in data accuracy.In this paper,the current preparation procedures and key steps of all kinds of quality control products and the practical application in food microbiological detection are expounded for the reference of relevant personnel.
