鹌鹑蛋蛋清与蛋黄类靶向代谢组学分析 被引量:1

Analysis on Targeted Metabolomics of Quail Egg Albumin and Egg Yolk

摘要 为分析鹌鹑蛋蛋清与蛋黄中差异表达的代谢物,随机选取蛋重大小基本一致的鹌鹑蛋6个进行测定,采用液质联用(LC-MS)的类靶向代谢组学方法对鹌鹑蛋蛋清和蛋黄中的差异表达代谢物进行分析。结果显示:在鹌鹑蛋蛋清和蛋黄中共获得差异代谢物304种,其中262种代谢物显著上调,42种代谢物显著下调;共找到相关代谢通路62条,其中4条通路表现为差异显著,分别为氨酰-tRNA生物合成,甘氨酸、丝氨酸和苏氨酸代谢,蛋白消化吸收,赖氨酸降解。研究表明蛋清和蛋黄中的差异代谢物主要通过上述4条通路发挥作用;与蛋清相比,L-赖氨酸、溶血卵磷脂酰胆碱14∶0在蛋黄中上调倍数最大,尿酸在蛋黄中下调倍数最大,说明上述三种物质是鹌鹑蛋蛋黄和蛋白中的重要差异代谢物。 In order to analyze the differentially expressed metabolites in quail egg albumin and egg yolk,6 quail eggs basically with the same egg weight were randomly selected for determination.The differential metabolites of quail egg albumin and yolk were analyzed by liquid chromatography-tandem mass spectrometry(LC-MS)with a targeted metabonomics method in this study.The results showed that a total of 304 differentially expressed metabolites in quail egg albumin and yolk were obtained,262metabolites were significantly up-regulated,and 42 metabolites were significantly downregulated;A total of 62 related metabolic pathways were found,of which 4 pathways were significantly different,including aminoacyl tRNA biosynthesis,glycine,serine and threonine metabolism,protein digestion and absorption and lysine degradation.The results indicated that the differential metabolites in egg albumin and egg yolk mainly played a role through the above 4 pathways.Compared with the egg albumin group,L-lysine and lysophosphatidylcholine(14∶0)had the largest up-regulation multiple in egg yolk,and uric acid had the largest down-regulation multiple.The results showed that L-lysine,lysophosphatidylcholine 14∶0 and uric acid were important differential metabolites.
