摘要
西梅是近年来我国从国外引进的新型水果,富含维生素、无机盐、膳食纤维和酚类化合物等多种营养成分,且不含胆固醇和脂肪,具有抗氧化、保护心血管系统、抗结肠癌、促进骨骼健康、缓解便秘等多种功效。由于西梅水分含量较高,采后易发生腐烂变质,不耐贮存,造成浪费,因此,对西梅进行加工,不仅能减少资源的浪费,还能提高经济和社会效益。本文综述了西梅的营养成分、生物活性功能以及加工制品的研究现状,旨在为西梅产业化发展及其加工产品开发提供理论依据。
Prunus domestica L.is a new fruit that has been introduced from abroad in recent years in China and is rich in many nutritional components,such as vitamins,minerals,dietary fiber,and phenolic compounds,and does not contain fat and cholesterol.Studies have shown that prune has many efficacies including antioxidant,protecting cardiovascular system,against colon cancer,promoting bone health,and alleviating constipation.Because of the high moisture content of prune,it is prone to decay and deterioration after harvest and is intolerant of storage,resulting in the waste of fruit products.Therefore,processing prunes can not only reduce the waste of resources,bu also improve the economy and benefits.In this paper,the nutritional components,biological activities and the research status of processed products of prune were reviewed,aiming at providing theoretical basis for the development of industrialization and the processed products of P.domestica.
