摘要
对豆浆这类基质营养丰富容易发酵,且易污染大肠菌群这一现象,开展运用国标法中的平板计数法测定豆浆中的大肠菌群的讨论。平板计数法是此次研究的主要方法,抽取了市面上5个品牌包装豆浆和5个市场上零售的豆浆进行大肠菌群的检测,结果出现零售豆浆存在大肠菌群总数不合格现象。根据存在的安全问题提出解决方案,加强食品原料的追溯管理,予以针对性的安全监控和检验;严格管理原料的贮存,防止被污染。
For the phenomenon that such a matrix as soybean milk was rich in nutrients and easy to ferment and easy to contaminate coliforms,the determination of coliform bacteria in soy milk by the plate counting method in the national standard method was discussed.The plate counting method was the main method of this study,5 brands of packaged soy milk on the market were extracted,5 retail soy milk on the market were detected for coliform bacteria,and the total number of coliform bacteria in retail soy milk was unqualifed.Propose solutions according to existing safety problems,strengthen the traceability management of food raw materials,and provide targeted safety monitoring and inspection;Strictly manage the storage of raw materials to prevent contamination.
