苏州工业园区小餐饮食品安全现状及监管对策研究

Study on the Current Situation of Small Catering Food Safety and Regulatory Countermeasures in Suzhou Industrial Park

摘要 目的:了解苏州工业园区小餐饮食品安全状况,揭示食品经营过程中存在的食品安全问题。方法:采用现场调查和网络问卷调查相结合的方法,对苏州工业园区小餐饮食品安全状况进行调查。结果:抽查的98家小餐饮均持有效食品经营许可证,从业人员健康证持证率为73.47%,基础卫生设施齐全的占93.88%。问卷结果显示,33.13%的小餐饮经营者一年内没有参加或只参加了一次培训,33.72%的小餐饮在食品安全方面的投入低于10000元;从业人员食品安全知识正确率为96.83%,不同年龄段和教育程度的答题正确率差异具有统计学意义(P<0.05);消费者在发现食品安全问题后,处理方式上首选“不再光顾”(50.94%),其次为找商家理论(36.79%)、照常买单(9.43%)和投诉(2.83%)。结论:苏州工业园区小餐饮店量多面广,经营与食品安全总体情况良好,但仍存在一定的食品安全隐患,如食品安全方面投入少、缺乏社会监督等。有必要加强小餐饮食品安全宣传和培训工作,并加大监督执法力度。 Objective:To understand the food safety status of small restaurants in Suzhou industrial park and reveal the food safety issues that exist in the food management process.Method:A combination of on-site investigation and online questionnaire survey was used to investigate the food safety status of small restaurants in Suzhou industrial park.Result:98 small restaurants sampled hold valid food business licenses,with a health certificate holding rate of 73.47%among employees and 93.88%having complete basic sanitation facilities.The questionnaire results show that 33.13%of small restaurant operators have not participated or only participated in training once within a year,and 33.72%of small restaurants have invested less than 10000 yuan in food safety;the accuracy rate of food safety knowledge among employees was 96.83%,and there was a statistically significant difference in percentage of correct answers among different age groups and educational levels(P<0.05);after discovering food safety issues,consumers prefer to“no longer visit”(50.94%),followed by the theory of seeking merchants(36.79%),paying as usual(9.43%),and complaints(2.83%).Conclusion:The Suzhou industrial park has a large number of small restaurants with a wide range,and the overall operation and food safety situation are good.However,there are still certain food safety hazards,such as low investment in food safety and lack of social supervision.It is necessary to strengthen the promotion and training of food safety in small restaurants,and increase supervision and law enforcement efforts.
