摘要
为探究荷叶醇提物(LLAE)与壳聚糖(CH)复合涂膜对低温贮藏蓝莓贮藏品质的影响。分别将不同质量浓度的LLAE(0、1.0、2.0及4.0 g/L)与CH复配对蓝莓进行涂膜处理,并在4℃条件对各处理组蓝莓的贮藏品质指标和防御酶系活性进行测定分析。结果表明:与对照组相比,LLAE-CH复合涂膜处理组可有效减缓蓝莓可滴定酸含量和硬度的下降,减小可溶性固形物含量、维生素C含量、花青素含量等营养成分的损失,并有效抑制采后蓝莓果实的失重率、腐烂率、呼吸强度、丙二醛含量的上升,且提高过氧化氢酶活性、过氧化物酶活性和总酚含量。因此,LLAE-CH复合涂膜有效提升蓝莓果实贮藏品质,减少营养物质消耗,提高其抗氧化活性,从而有效延长了蓝莓的货架期,且4.0 g/L LLAE-CH复合涂膜对蓝莓果实的保鲜效果最佳。
To explore the effect of lotus leaf alcohol extract(LLAE)and chitosan composite coating on the storage quality of blueberry at low temperature.Blueberries were coated with the composite films of different concentrations of LLAE(0,1.0,2.0 and 4.0 g/L)and chitosan(CH),the storage quality index and defense enzyme activity of blueberries in each treatment group were measured and analyzed at 4℃.The results showed that compared with control group,LLAE-CH composite coating film treatment effectively slowed down the decline of titratable acid(TA)and hardness of blueberries,reduced the loss of total soluble solids(TSS),vitamin C(VC),anthocyanin and other nutrients of treated blueberries,and effectively inhibited the weight loss rate,decay rate,respiratory intensity and malondialdehyde(MDA)content of blueberry fruits after harvest.The content of MDA,the activity of catalase(CAT)and peroxidase(POD),the total phenol(TP)of the treated blueberries all increased.Therefore,LLAECH composite coating film effectively improved the storage quality of blueberry fruits,reduced the blueberries nutrient consumption,improved their antioxidant activity,and thus extended the shelf life of blueberries.The 4.0 g/L LLAECH composite coating film had the best preservation effect on blueberry fruits.
