摘要
丙烯酰胺(ACR)是一种典型的神经毒物,广泛存在于工业原料及食品中。近年来,大量研究证实ACR会影响胎儿发育,并具有潜在的神经发育毒性,其健康风险备受关注。笔者综述了ACR的体内代谢、神经发育毒性效应及其相关机制,并对ACR神经发育毒性的未来研究方向进行了展望。
Acrylamide(ACR)is a typical neurotoxicant that is widely found in industrial ingredients and food.In recent years,many studies have confirmed that ACR can affect fetal development and has potential neurodevelopmental toxicity,and its health risks are of great concern.The in vivo metabolism of ACR,the neurodevelopmental toxic effects and related mechanisms were reviewed in the present paper,and provided an outlook on the research directions of ACR neurodevelopmental toxicity.
