摘要
本研究建立了超高效液相色谱-串联质谱法测定白酒中甜菊糖苷、甜菊双糖苷、乳糖、蔗糖、赤藓糖醇、麦芽糖醇、甘素、木糖醇8种甜味剂的检测方法。采用ACQUITY UPLC BEH Amide(1.7μm×2.1×100 mm)色谱柱,以甲醇-乙酸铵为流动相,在电喷雾负离子模式下进行数据采集分析。8种目标物质在0.1~5.0μg/mL范围内线性良好,线性相关系数≥0.995,方法的检出限为0.3 mg/kg,定量限为1.0 mg/kg,三个加标水平的回收率在78.0%~120.3%之间,相对标准偏差在1.8%~14.9%之间。方法操作简单、准确,适用于白酒中甜味剂的检测。
In this study,a UPLC-MS/MS method for the determination of stevioside,rebaudioside,lactose,sucrose,erythritol,malti-tol,dulcin and xylite in Baijiu was established.The ACQUITY UPLC BEH Amide column(1.7μm×2.1×100 mm)was adopted,meth-anol-ammonium acetate was used as the mobile phase,and the data were collected and analyzed in negative ion mode using MRM.The eight sweeteners had good linear relationship in the range of 0.1μg/mL to 5.0μg/mL,and the linear correlation coefficient was higher than 0.995.The limit of detection was 0.3 mg/kg,the limit of quantitation was 1.0 mg/kg,the spiked recoveries were between 78.0%and 120.3%,and the relative standard deviation was between 1.8%and 14.7%.The method is simple and accurate,suitable for the detection of sweeteners in Baijiu.
