摘要
论述了甲壳素 /壳聚糖的分布及性质 ,以及壳聚糖在果蔬贮藏和果汁澄清中的应用 。
The distribution and general properties of chitin/chitosan,the application of chitosan to the clarification of fruit juice and the storage and preservation of fruit and vegetable were described.It showed chitosan as a new clarifying and preservation agent,with vast prospect on application.
