摘要
本文对苦杏仁的脱皮去毒方法进行了研究。结果表明:采用0.5%Na2CO3+5%Ca(OH)2为脱皮剂,温度90℃,脱皮时间1min效果最好;用0.3%HCl浸泡苦杏仁48h,再用0.5%Na2CO3处理,可使苦杏仁甙含量从3.92%降低到0.16%,去毒率达95.9%。用该法处理的苦杏仁白嫩可口,香味浓郁。
The method of decorticationand and detoxification of bitter almond was studied. The results showed that 0.5%Na2CO3 +5%Ca(OH)2, 90 ℃, 1 min,decortication effect was the best. Amygdalin content was reduced from 3.92% to 0.16%, detoxification rate up to 95.9%,bitter almond Soaked with 0.3% HCl for 48 h and then treated with 0.5%Na2CO3, white nice and rich fragrance bitter Almond could be gained.
