摘要
预冷是蔬菜冷链的首要环节,对蔬菜保鲜至关重要。以大白菜、黄瓜、生菜和香菇四种蔬菜作为实验对象,得到了这几种蔬菜的真空预冷实验数据,并对实验数据进行对比分析,为今后真空预冷技术的推广应用提供参考。
