摘要
主要叙述了纯生啤酒的特点,进一步阐述了纯生啤酒生产过程中如何控制生产工艺、无菌过滤和无菌灌装等重点工序,严格实现无菌化操作,从而实现生产出优质的纯生啤酒。
The characteristics of draught beer was introduced in this paper. Besides, the control of production techniques and the key techniques including sterile filtration and sterile bottle-filling etc. were elaborated. Only strict sterile manipulation in production process could produce quality draught beer.
