摘要
运用十二烷基硫酸钠聚丙烯酰胺凝胶电泳(SDS-AGE)法分析牛乳蛋白质,以脱脂牛乳为对照,分析牛乳中掺入不同比例大豆蛋白粉和乳清蛋白粉的样品,经凝胶图像分析系统分析得这2种蛋白粉掺入牛乳的最低检出限分别为:0.79%和4.4%(m/m),应用该法对5种市售婴幼儿奶粉进行鉴定,表明该法能较快速准确地表征乳蛋白组成,为乳及乳品质量的监控提供了一种直观有效的手段。
Sodium dodecyl sulphate-polyacrylamide gel electrophoresis (SDS-PAGE)detected skim milk containing different ratio(%)soy protein powder and whey powder,respectively.The detection limits of the two adulterations in cows'milk were 0.79%and 4.4% (m/m),respectively.Several infants'milk powder from markets was identified by SDS-PAGE.The method,by which the composition of milk protein could be indicated rapidly,economically and accurately,and used as a visual and effective method for the quality control of milk and dairy products.
