摘要
微波技术在食品工业上的研究应用起始于上个世纪,如今已广泛应用于食品行业及其它行业。本文对微波杀菌技术的机理和其在食品工业中的应用状况进行了综述,同时阐述了微波杀菌工艺的发展现状,并对目前仍存在的问题和发展趋势进行了讨论。
Research and application of microwave technology in food industry started from the last century and this technology has been widely used in the food and other industries. In this paper,the mechanism and utilization sterilization technology in the food industry were reviewed. The development tendency and problems of this technology were also discussed.
