摘要
分析了浸米浆水的理化成分,通过几种不同的活性干酵母进行米浆水回用作复制糟香白酒的投料水发酵试验研究,结果表明:米浆水回用作复制糟香白酒的投料水是可行的,优选出了适宜于高酸度发酵的干酵母,处理了大部分米浆水,承担了社会责任,为社会带来良好社会效益。
